Stir Fried Veggie SubCorey Buckner

EAT MORE PLANTS!
If you know me, you know how much I love my vegetables. I'm perfectly fine having a full meal that doesn't have a meat portion as that's my typically preferred method of eating. Unfortunately, I love bread too, but I cannot eat it that often because it isn't exactly the healthiest option when you are watching your weight. Still, thanks to a little thing called "moderation"; I am able to occasionally indulge into a delicious, homemade veggie sub from time to time. When I do; this baby here is my go to solution.
INGERDIENTS
- Red bell pepper
- Green bell pepper
- White onion
- Cucumber
- Mushrooms
- Romaine lettuce
- Black pepper
- Garlic salt
- Italian Seasoning
- Olive oil
- Whole wheat sub bread
Directions
1. Cut your bell peppers and onions into thin slices
2. Cut your cucumbers into slices, and thin into fours
3. You can either use your mushrooms whole, or cut them into slices depending on your preference
4. Pour a thing layer of olive oil into a sauce pan over a medium flame
5. Once the oil is hot, pour your vegetables into the pan and stir
6. While stirring, lightly season your your veggies with black pepper, garlic salt and Italian seasoning
7. Cook your veggies until they reach the consistency of your liking
8. Place a few leaves of Romaine lettuce in your whole wheat sub bread
9. Add the stir fried veggies on top of the lettuce
10. Enjoy!
