Salmon, Brussel Sprouts & Pesto Pasta by MeeksCorey Buckner
August 22, 2022
Last night I was given quite the treat in the form of this delicious, muscle-building meal that my wife Meeks made for me. This meal actually started on another date after we had stopped by Red Star Lounge for an impromptu outing and decided to stop by a nearby grocery store afterwards. That’s what I call a grown folks night out, drinks and a meal followed by a romantic stroll through the grocery store. Seriously though, while in the grocery store we picked up a few items, most relevant to this meal being the fresh salmon steaks and those amazing-looking Brussel sprouts.
I am glad that Meeks didn’t live during the time of the Salem Witch Trials, because one taste of the magic that she puts into seasoning food would have definitely have the townsfolk screaming, “witch!” I have no idea how she does it, nor do I bother asking; but when I season food, even to the best of my abilities, I never create the overflow of favor that she does. It’s a marvel to watch my wife work her way around the kitchen, and it is my esteemed pleasure to reward her efforts by promptly gobbling down into my gullet any and everything that she puts together for me.
This meal here was amazing. The pasta was seasoned with Pesto, and along with whatever magic she performed, she topped the salmon and Brussel sprouts off with honey garlic ginger glaze. My tastebuds were not ready for this, and immediately became overrun with joy with the first bite. This meal here may as well have been cooked and served from a cauldron after capturing the “eye of newt” and summoning a thousand year old spell because there had to be some form of wizardry... or black girl magic thrown into it. In a nutshell, the taste, texture and smell of this meal were utterly otherworldly; and sent my taste buds on such a blissful journey that I believe I now know what heaven tastes like.

It's been quite a long time since I made myself some pasta. Meeks and I pulled some veggies from our garden yesterday, so I combined them in a stir fry with some store-bought veggies and topped my pasta with them. Can you guess all the veggies I used in my pasta by looking at the picture?
